  • 1 cup rice
  • 2 cups water
  • Cooking oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 inch piece ginger, chopped
  • 2 cubes veg or chicken stock
  • 2 tsp curry powder
  • 1 can Coconut milk
  • 1/2 tsp turmeric powder
  • 2 Chicken breast fillets
  • Breadcrumbs
  • 1 cup plain flour
  • 2 eggs
  • Soy sauce
  • Coriander and red chilli for garnish
