Big Mike’s Cajun Mood-Boosting Rice

Join chef Mike Springer as he demonstrates a delicious Cajun rice dish that’s packed with mood-boosting ingredients and Caribbean flavours. The recipe combines hearty beans and lentils, earthy thyme and garlic flavours, and rich eggs and butter, all served atop fluffy basmati rice. The addition of roasted walnuts provides a delightful nutty crunch. Mike also shows how to make a zingy accompanying mocktail, the Ginger Zest Sparkler.

Equipment

  • Large oven-safe skillet or casserole dish with lid (alternatively use aluminium foil to cover)
  • A second skillet
  • A glass

For the Cajun Rice

Ingredients

  • 2 cups basmati rice
  • 1/2 cup red lentils
  • 1 can of kidney beans, drained and rinsed
  • 1 can of chickpeas, drained and rinsed
  • 4-6 free-range eggs
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 2-3 sprigs of fresh thyme, leaves stripped
  • 2 cups baby spinach
  • 1/2 cup roasted walnuts, chopped
  • 4 cups chicken stock
  • 2 tablespoons full-fat butter
  • 2 teaspoons paprika
  • 1 teaspoon lemon pepper seasoning
  • Salt and pepper to taste
  • Olive oil for frying
