  • 125g self-raising flour
  • 60g salted butter
  • 50g caster sugar
  • ½ teaspoon mixed spice
  • 40g sultanas
  • ½ beaten egg – little milk if needed
  • 1 large mixing bowl
  • Wooden spoon/table spoon
  • A small bowl
  • Knife, fork and tea spoons
  • Rolling pin
  • Cake cutters (small round ones)
  • Griddle/heavy based frying pan
  • Cooling tray
  1. Rub the butter into the flour until the mixture looks like breadcrumbs.

  2. Add the sugar, mixed spice and sultanas and mix well. Add the beaten egg and bring all the ingredients together, starting with a spoon, and then use your hands to bring everything together to form a dough.

  3. Sprinkle some flour on your rolling mat/chopping board. Roll the dough out on the mat/board to a thickness of about 5 mm. Cut into shapes and keep rolling and cutting until the dough is used up.

  4. Take to the griddle area to cook – be careful, the griddles are very hot.

  5. Cook the cakes until they are brown on both sides – usually a few minutes. Cool on a cooling tray and sprinkle with sugar.
