  • 250g butter – not margarine (you need to be able to mix with it so make sure it’s soft)
  • 110g caster sugar
  • Zest of a lemon
  • 335g plain flour

To add a lemon icing, Michelle recommends 160g icing sugar and 1- 2 tbsp lemon juice.
