Lemon shortbread

- 250g butter – not margarine (you need to be able to mix with it so make sure it’s soft)
- 110g caster sugar
- Zest of a lemon
- 335g plain flour
To add a lemon icing, Michelle recommends 160g icing sugar and 1- 2 tbsp lemon juice.
