Glamorgan Sausages

For the sausages:
- 100g white breadcrumbs
- 75g Caerphilly or Gorwydd cheese
- 1 spring onion, or Half a leek, finely chopped
- 1 tbsp chopped parsley
- Half a tsp of fresh thyme
- 1 egg, beaten
- 1 tsp Welsh mustard
- Salt and pepper
- Butter or 3 tbsp sunflower oil for frying
For the Celeriac Salad:
- ½ celeriac
- 2 carrots
- 1 apple juice
- ½ lemon
- 1 tbsp of mayonnaise
- 1 tbsp of natural yoghurt
- 1 tbsp of salad dressing
- Bunch of chopped parsley
- Salt and pepper
