For the sausages:

  • 100g white breadcrumbs
  • 75g Caerphilly or Gorwydd cheese
  • 1 spring onion, or Half a leek, finely chopped
  • 1 tbsp chopped parsley
  • Half a tsp of fresh thyme
  • 1 egg, beaten
  • 1 tsp Welsh mustard
  • Salt and pepper
  • Butter or 3 tbsp sunflower oil for frying

For the Celeriac Salad:

  • ½ celeriac
  • 2 carrots
  • 1 apple juice
  • ½ lemon
  • 1 tbsp of mayonnaise
  • 1 tbsp of natural yoghurt
  • 1 tbsp of salad dressing
  • Bunch of chopped parsley
  • Salt and pepper
