- 225g Chilled unsalted butter
- 2 Medium egg yolks
- 150g Grated Cheddar cheese
- 50g Grated Italian hard cheese
- 1tsp Dijon mustard
- Pinch of salt
- Good pinch Cayenne Pepper
- 4-5 tbsp Cold Water
- 25 flaked Almond Slices (optional)
