  • 2 cup oats  
  • ½ cup mixed nuts  
  • 1/3 cup seeds (flax, sunflower, pumpkin, sesame) 
  • ½ tsp cinnamon  
  • 4 really ripe bananas, mashed  
  • Handful dried fruit – dates, cranberries, sultanas  
  • 1/3 cup coconut oil  
  • 4 tbsp peanut butter  
  • 2 tbsp maple syrup  
  • Your choice of nuts, seeds, dried fruits, coconut, blueberries  

Method: 

  1. Pre heat the oven to gas mark 5/190C. 

  2. Mix the oats, nuts, seeds and cinnamon in a large bowl and add the mashed bananas. 

  3. Heat the maple syrup, coconut oil and peanut butter in a saucepan over a low heat until combined.
     
  4. Add the wet mix to the banana mixture and stir until everything is combined (this should be sticky but not wet). 

  5. Line a baking tray with greaseproof paper and spread the mix on top, around an inch thick. 

  6. Bake for 20 minutes.

  7. Remove from the oven, leave to cool slightly and then divide into squares.
