To make an 8” Cheesecake (or around 12 cupcake size cheesecakes) you will need:

  • 300g Biscuits – digestive, choc digestives, chocolate cookies – the choice is yours!
  • 150g Melted Butter
  • 300g Cream Cheese (Philadelphia is Michelle’s preference)
  • 100g Chocolate Spread or Nutella Spread
  • 284ml (one pot) Double Cream
  • 3tbsp Icing Sugar
  • 100g Additional Chocolate Spread for decorating (optional)
  • Punnet of Strawberries for Decorating (optional)
  • Chocolate Flakes or your favourite chocolate for decoration (optional)

  • 20cm Dish or Springform Cake tin (alternatively silicon cupcake cases work well for mini versions)
  • Mixing Bowl x2
  • Rolling pin or Food processor
  • Whisk – electric makes life easier, but both will work
