Join professional baker and cookery author Michelle for this hearty Lasagne cookalong. Recipe makes one large family size lasagne.

For smaller portions, halve the ingredients or use smaller ovenproof dishes to make smaller lasagnes and freeze some.

  • 500g minced beef (or Quorn or even more veg!) 
  • 1 400g tin of tomatoes 
  • 1 medium/large white onion (or red if that's what you have!) 
  • Splash of oil (olive or vegetable oil) 
  • 2 cloves of garlic (easy garlic is fine too) 
  • 150g mushrooms (or whatever you have!) 
  • 1 courgette (optional) 
  • 2 tsp Oregano or Italian Herbs (dried or fresh) 
  • 200ml boiling water 
  • 1 vegetable stock cube 
  • About 9 lasagne pasta sheets 
  • 60g margarine or butter 
  • 60g plain flour 
  • 450ml milk 
  • 70g cheese (and a little extra to sprinkle on top) 
  • Deep sided large wide base pan 
  • Medium pan 
  • Wooden spoon 
  • Lasagne dish (Michelle's is 25cm square and 6cm deep) 
  • Sharp knife 
  • Chopping board 
  • Cheese grater 
  • Ladle
