  • 100g plain flour
  • 2 eggs
  • 300ml milk
  • 1tbsp sunflower oil (or vegetable oil if preferred) plus extra for frying

Filling suggestions:

  • Lemon Juice and sugar
  • Nutella and banana
  • Berries and yoghurt
  • Jug
  • Whisk
  • Bowl
  • Ladle
  • Frying pan
  1. Whisk the milk and oil together in a jug, then add the eggs and whisk until smooth.
  2. Place the flour in a bowl and gradually add the liquid mixture, starting with a small amount to form a smooth paste. Continue adding the remaining liquid bit by bit until you have a thin, smooth batter.
  3. Heat a lightly oiled frying pan over a medium heat.
  4. Add one ladle of batter to the pan and quickly swirl or use the back of a spoon to spread it into a thin, even layer.
  5. Cook until the edges begin to lift and the surface starts to bubble, then flip and cook the other side until lightly golden.
  6. Repeat with the remaining batter, adding a little more oil if needed. Then stack and cover to keep warm.
