  • 4 eggs
  • 65g caster sugar
  • 65g soft brown sugar
  • 60g melted butter
  • 65g plain flour
  • 40g cocoa (an extra 2 tbsp for dusting later)
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • 250ml double cream

You will need 125g double cream, 125g chocolate and a little icing sugar (to decorate). You are welcome to add Christmas decoration toppers too!

  • Swiss Roll Tray (this is a shallow tray around 10x15")
  • Parchment paper (two sheets)
  • Electric whisk
  • A couple of mixing bowls
  • Sieve
  • Whisk
  • Pastry brush (with a little margarine or oil)
  • Large metal spoon (serving spoon will do!)
  • Pan with heat proof bowl over the top for melting the ganache
