  • 225g cooked beetroot (a vacuum pack in natural juices is perfect) 
  • 2 medium eggs 
  • 100ml vegetable oil 
  • 100g caster sugar 
  • 170g plain flour 
  • 1.5 tsp baking powder 
  • 20g cocoa 
  • Pinch of salt 
  • 50-70g melted dark chocolate to drizzle over the top (optional) 
  • Mixing bowl 
  • Jug 
  • Food processor or hand blender (to mush the beetroot) 
  • Parchment paper 
  • 2lb baking tin
