Tutor: Rae Wilson, Royal Voluntary Service volunteer and curd maker
Rae Wilson is a Royal Voluntary Service volunteer from Scotland. She is an expert jam and preserve maker, and in this session, Rae shares her recipe for how to make a zingy lemon curd. Curds are sweet spreads that can be spread on bread and toast or used as a cake filling. Curds differ from jams as they are made with fruit juice and sugar rather than whole fruit.

Prep: prepare space for making and have jars ready
Video time: 7 minutes (allow 30 minutes to make the curd)
What you need to take part:
- 4 lemons - rind and juice
- 4 eggs
- 350g castor sugar
- 100g unsalted butter
- Large heavy based saucepan
- Juicer
- Potato peeler
- Wooden and metal spoons
- Sharp knife
- Sieve
- Bowl
- Fork
- Glass jars to store the lemon curd
